From Brewing Classic Styles, pp. 127, modified for available hops. Mash at 156°F. Collect first 2 gallons of first runnings, and boil down to ~ 2qt; re-add to boil. Collect 13 gallons pre-boil for 90min dry winter boil. Split batch: Wyeast 1728 at ~57°F (stressed yeast to produce smoky esters) and "normal" ferm temps.
